Our Philosophy
De La Tierra cooking school sees food as a wonderful gift, a thing to share in good moments with good people. We celebrate the way community connects through food, those who toil to grow it, and the deep tradition behind its production. We aim to share Mexican food, in its simplicity, complexity and diversity with those of similar passions. In researching and putting together our recipes and ideas for the school, we have focused on true Mexican recipes as we have found them, without modernisation or fanfare.
Though De La Tierra focuses on Mexican food, it is foremost a cooking school. Travis aims to not only instruct on the dishes that are being cooked, but also the simple methods that can be applied to any good produce. That is, we utilise the incredible culinary tradition of Mexico to connect ourselves, and our students, with food.
We feel this is a simple philosophy as it is fundamentally reliant on good produce, of which there is no shortage in Oaxaca. We are proud to support local producers, and use and recommend their products wherever possible.
